Is it because we are conflating "genre" with "formula"?
What are we really responding to when we say "that's genre" with loathing?
If we start thinking about "formulaic" then nearly all aspects of fiction can be examined, not just the genre tropes that are being employed.
Comparison with cooking. We may get bored with a style (i.e. genre) of cooking, or it isn't to our taste, but we don't (generally) rail against its existence.
